Sticky Toffee Pudding Recipe

This sticky toffee pudding recipe from Stephanie Alexander is easy to make and is always a dessert winner. Just the thing to settle down with on the couch after dinner, or a surefire popular pudding to serve guests. Oh and it has dates in it. They’re healthy, right?

Ingredients

  • 170 g dates, stoned and chopped
  • 1 teaspoon bicarbonate of soda
  • 1¼ cups boiling water
  • 60 g unsalted butter
  • ¾ cup castor sugar, or brown sugar
  • 2 eggs
  • 170 g self-raising flour
  • ½ teaspoon pure vanilla

Sauce

  • 200 g brown sugar
  • ½ cup thick cream
  • 125 g unsalted butter
  • 1 vanilla bean, split
