Kids loooove helping to make biscuits. Rolling the dough, using the cookie cutters and icing the bikkies … so much fun! This fun kids cookie recipe produces sweet little heart-shaped biscuits, coated in pretty pink lemon-flavoured icing. Granted, if the kids are ‘helping’ the icing might not turn out as perfect as in the picture – but they’ll still be absolutely delicious. Sweet and light with a little citrus tang.
Ingredients
- 250g unsalted butter, cubed and softened at room temperature
- 2 cups (250g) pure icing sugar
- rind of 1 lime, finely grated
- rind of 1 lemon, finely grated
- rind of 1 orange, finely grated
- 4 cups (500g plain flour), sifted
- 60ml water
Icing
- 1 cup (125g) pure icing sugar, sifted
- 1½ tbs lemon juice
- 2-3 drops pink food colouring
