This mix from Smitten Kitchen can be kept in an air-tight container for up to two months and is enough to make you nine cups of complete joy.

1/2 cup granulated sugar
1 tablespoon cornflour
85g semi- or bittersweet chocolate, roughly chopped
1/2 cup cocoa powder, any kind you like
1/4 tsp vanilla extract (or the seeds from a tiny segment of fresh vanilla bean)
1/8 tsp fine sea salt or 1/4 tsp kosher salt
