Slices are a sure-thing for kids’ snacks. But the best slices of all are the ones you don’t have to bake!

This delicious and easy strawberry, lime and macadamia slice requires no baking and is sugar, flour, dairy and guilt-free! With strawberries and banana in the base and a lime macadamia icing, the slice is a beautiful balance of fruit and nut.

The lovely Shanai from Kids Eat by Shanai has shared this recipe with us and we can’t wait to give it a go ourselves! The mixture makes 16 squares and can be made in a Thermomix or a food processor.

Ingredients

Base
8 Medjool dates, pitted
1 cup/ 160g strawberries, chopped
1/4 cup banana
2 cups/ 280g macadamia nuts
3 tbsp coconut oil
3 tbsp chia seeds
1/2 cup/ 30g desiccated coconut
1 tsp vanilla extract

Icing
1 cup / 140g macadamia nuts
½ cup / 100g melted coconut oil
½ cup / 170g maple syrup
4 tbsp lime juice
1 tsp vanilla extract

Method

1. Line a baking tray with baking paper. Blend the dates in a food processor until smooth.
2. Add remaining base ingredients and pulse until just combined.  The mixture should stick together like a dough. If not, add a tablespoon of water and pulse again.
3. Transfer the mixture to the lined tray and press down evenly to form a base, place in the freezer to set.
4. Wash and dry the processor, add all of the icing ingredients and blend until smooth and creamy.
5. Remove tray from freezer and pour over icing, set in the fridge or freezer. Once the icing is firm, cut into 16 squares and store in the fridge or freezer.

Thermomix method

1. Line a baking tray with baking paper. Place the dates into mixing bowl and blend 10 sec / speed 8.
2. Add remaining base ingredients and blend 20 sec / speed 8.  The mixture should stick together like a dough. If not, add a tablespoon of water and blend a further 10 sec / speed 8.
3. Transfer the mixture to the lined tray and press down evenly to form a base, place in the freezer to set.
4. Wash and dry the mixing bowl, add all of the icing ingredients and blend 1 min / speed 8, until smooth and creamy.
5. Remove tray from freezer and pour over icing, set in the fridge or freezer.
6. Once the icing is firm, cut into 16 squares and store in the fridge or freezer.

Nom, nom, nom. Raw, refreshing and ready to add to the lunch box (if your kids’ school allows nuts) or serve as an after school snack, this is definitely one to add to the baking list this week.
