Recipe: Buttery yellow pasta sauce with sneaky squash

Creamy, buttery and loaded with protein, magnesium and vitamins, you can’t go wrong with yellow squash pasta sauce. Kids will gobble it up by the spoonful and each serving comes with plenty of sneaky squash goodness.

Serve the savoury sauce with fettuccine or your pasta of choice and add a bit of colour ad flavour to your traditional pasta night.

Ingredients

4 buttons yellow squash
2 tbsp. butter
2 tbsp. grated cheese
250 g fettucine or pasta of choice

Method

Step 1.Cut squash into quarters and cook in a steam basket or boiling water for 10-15 mins until cooked well.

Step 2. Discard any water and place squash into a food processor with the butter and blend until smooth.

Step 3. Cook pasta as per packet directions, stir through squash and serve topped with grated cheese.

Thermomix Method

Step 1. Cut the squash into quarters and place into TM basket.  Place 500g  water into mixing bowl, insert TM basket and cook 10 min / Varoma / speed 2.

2. Remove basket and discard water.  Place squash into mixing bowl and puree 20 sec / speed 8, gradually increasing speed from speed 1 to speed 8.
