When Grapeviner mum Jamie, from our Winter 2018 Baby Group, shared this fab little hack with her Mum’s Grapevine group we knew we had to write an article.
“Here’s my little hack for cooking small batches of zucchini slice in the jaffle maker. You could also use a toasty maker.” Jamie shared with Mum’s Grapevine.
“One zucchini (grated and squeezed to remove excess water), a slice of ham chopped, a sprinkle of grated cheese, and a couple of eggs. Spoon into the jaffle maker, and cook for 5-7 minutes (our toasty maker is a deeper kind so it takes a bit longer).
“Quicker than warming up the oven, and in our toasty, each triangle is the perfect size for a single baby portion. The toddler also loves them!
Jamie, also makes bubble and squeak with leftover roast veggies the same way.
“I have made all sorts of other things including meat/chicken pies with puff pastry, and I also mix up my zucchini slice recipe with other veggies I had stashed in the fridge. Super easy and super quick for those days when you need something fresh that won’t take forever.”
Jaffle Zucchini Slice Recipe
Ingredients
- 1 zucchini
- 1 slice of ham
- A sprinkle of grated cheese
- 2 eggs
Method
STEP 1: Grate the zucchini and place in a tea towel to squeeze out the excess water
STEP 2: Chop sliced ham into small pieces
STEP 3: Mix together zucchini, ham, grated cheese and eggs in a bowl
STEP 4: Spoon mixture into the jaffle maker and cook for 5-7 minutes (or until done)
